What do you intend?

RECIPE: Fluffy Wonder Waffles

High-Protein, Low-Fat, Easy digestion, Bio-available nutrients, Pre-biotics, Post-biotics, Gluten-Free, dairy-free, low sugar (can be made Vegan)

These are as delicious as they look! They are also easy to digest and contain bio-available nutrients!! However, I'm going to spare you the long banter of talking about how wonderful my cooking is and how much your mouth will water when you make these, so you can get to the recipe and start making them yourself. If you're anything like me, when I'm looking for a recipe, I get tired of scrolling all the way down to the bottom of the page just to find the recipe as someone writes an entire epilogue about their life and how they came to the recipe. I'll make it short and sweet. I wanted waffles and I wanted them to have a lot of protein, a moderate amount of carbs, and low in fat. So I made them. :)

Now for the recipe.

Fluffy Wonder Waffles


Ingredients:
  • 4 eggs OR for Vegans (use 1/4 cup Bob's Redmill egg substitute)
  • 2 scoops pea protein (I used a fermented pea protein)
  • 1 cups all-purpose flour mix (I used a sprouted Gluten free baking mix by The Sprouted Flour)
  • 1 cup garbanzo bean flour
  • 2 cups of plant-based milk 
  • 2 tbsp psyllium husk (I used this organic psyllium husk powder)
  • 1/4 tsp mineral salt (I used Redmond Real Salt)

Directions: Decide how you want to make the batter based on your own method of mixing. If you like to use a whisk in a bowl, go for it. If you prefer a mixer or even a blender, have at it. It really doesn't matter as long as the ingredients are mixed well and have a smooth consistency. Begin with adding all the wet ingredients together-eggs and milk. Then, in a separate bowl add in the dry ingredients, and stir well.  Add the wet ingredients to the dry.  If the mixture is too thick, add more milk, if it's too thin, it will thicken up in 5-8 minutes, if it's still too thin (which shouldn't happen) but let's say it does, just add 2 tbsp of flour until you get the right consistency. The consistency should be easy to pour into your waffle iron from your bowl. If it's too thick, your waffles will be dense and if they are too thin then they will stick to your waffle iron.
Toppings:
  • 1/4 cup fresh organic blackberries or blueberries (frozen can be used if out of season)
  • optional 2 tablespoons nut/seed butter of your choice

Directions:  Berry Reduction Topping
1 cup berries 
1 Tablespoon lemon juice  
(makes 4 servings)


This is pretty simple. Get a small sauce pot, put your berries in the pot. Turn the heat to a medium heat. Cook for about 5 minutes. If the berries are frozen you'll have to heat them up first for about 5 minutes, stirring occasionally, then add lemon juice and continue cooking until reduction about 5-10 additional minutes. 
Add the toppings to your waffles and enjoy these delicious and nutritious fluffy wonder waffles!
