Each cookie is a guilt-free powerhouse, combining the rich flavor of peanut butter with wholesome ingredients that make you feel good from the inside out.
 


Ingredients:
  • 1 cup (240g) natural, smooth salted peanut butter (no added sugar)
  • ¼ cup (50g) date sugar
  • 1 large egg
  • ½ cup (56g) almond flour
  • ½ cup (60g) garbanzo bean flour
  • ½ tsp baking soda
  • ½ tsp vanilla extract
  • ¼ tsp salt (adjust this if your peanut butter is already salted)
  • 4 oz (120ml) oat milk (around ½ cup)
  • 1 tbsp (15ml) avocado oil

Instructions:

Preheat the Oven: Preheat to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Ingredients: In a bowl, preferably in a stand mixer, combine the salted peanut butter, date sugar, egg, oat milk, and avocado oil until smooth. Stir in almond flour, garbanzo bean flour, baking soda, vanilla, and salt until well combined.

Shape the Cookies: Take a chunk of dough and form it into a ball about the size of a golf ball. Place the dough ball on the baking sheet, and then gently press it down with a fork. Use the fork to make a crisscross pattern on the top—first press down vertically and then press sideways to create a lovely imprint.

Bake: Bake for 10-12 minutes until the edges are golden and the centers look slightly soft.

Cool: Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
